the t-3 thing is just fight time speak, nothing fancy — it's three hours ahead of the event’s official time because that’s when the main card usually kicks off. so if they list the bout at 12am in las vegas (where most of these big ufc/boxing cards sit time-wise), then you just knock three hours off and it’s 9pm your doorstep.
for example right here, july 11th at t-3, that means 9pm on your watch if the bell rings at midnight their clock. keeps all the ads, weigh-ins, prelims and the main event roughly lined up without you having to do the math every five minutes.
